Gluten Free living can be bland and tasteless, with wheat being so surprisingly prevalent in too many supermarket products, there are few choices for tasty meals, so the alternative is to go back to the basics and cook your own whole foods to get the results that you want. This is the next recipe on my journey to help my friends and family with gluten issues, the classic southern style Hushpuppy (Hush Puppies).
I know that there is a great debate as to the correct corn meal to use for an authentic Hushpuppy recipe, what most people overlook is that corn meal is only half the flour, with wheat flour being the other half of the recipe and that is precisely what I’m addressing here. My goal is to switch out the dwarf wheat in the classic recipe for Einkorn for some yummy, gluten free, results.
- 122 grams Einkorn
- 122 grans Corn meal
- 0.5 teaspoon Baking Soda
- 0.5 teaspoon Salt
- 1 Cup Buttermilk
- 0.5 Cup Grated Onion
- Mix until it all just barely comes together
- Let stand undisturbed for 10 minutes
- Scoop gently with a small ice cream disher and deep fry at 375 degrees F for 2 minutes
- Turn each Hushpuppy over and fry 30 more seconds, or until golden brown
If you have access to the authentic southern corn meal for Hushpuppies then definitely use that, its finer and a higher grade than what the rest of us can get. Yes, I did have a southerner test my results and she gave them a thumbs up, they are light, crispy and taste just like the the real thing with a great texture and flavor. This is one time that gluten free does not mean flavor free, they really are that yummy. Enjoy!
